More than a colorful potato
A few years ago I stumbled across a sweet potato recipe on social media. Me, the little European I am, had never heard, seen or tasted this weird orange potato before. (And I also didn’t know that they also existed in other colors.) Worldwide, there are over hundreds of different varieties of sweet potatoes, ranging from orange, gold and white to deep red.
Sweet potatoes originated in Central and South America and quickly spread in the tropical regions all over the planet. The root plant was then brought to Africa by liberated slaves and since then also made its way into European supermarkets. Currently the orange varieties like “Evangeline” with orange-brownish skin and orange flesh are most common ones around here.
Not only are sweet potatoes delicious with their mild sweet flavor and very versatile, they also offer a considerable amount of health benefits.
Although naturally sweet-tasting, sweet potatoes will not cause blood sugar spikes, which are related to fatigue and weight gain. The natural sugars are slowly released into the bloodstream, helping to ensure a balanced and regular source of energy. A lack of iron can lead to anemia which can fatigue, weakness, heart palpitations, shortness of breath or lightheadedness. If untreated it can even lead to heart diseases. Sweet potatoes contain a fair amount of iron which helps to prevent all of the above. They also contain other crucial minerals like magnesium and potassium. Sweet potatoes are high in vitamin B6 which helps the body to maintain a healthy nervous system, to make hemoglobin that carries oxygen in red blood cells throughout the body. Vitamin C, which you guessed it, also naturally occurs in sweet potatoes, among other things, produces collagen which helps maintain the skins youthful appearance. Apart from all of the mentioned and more they are fat and cholesterol-free and a good source of fiber when eaten with the skin on.
